Roasted Pineapple and Pepper Salsa

Ingredients

½ pineapple
1 mango, seeded
2 tbsp. lime juice
1 tbsp. chopped cilantro leaves
2 tbsp. honey
½ jalapeno pepper, seeded
½ red onion
½ red bell pepper, seeded
Salt to taste

Directions

Core and peel pineapple half and cut into ¼ inch slices. Cut mango into ¼ inch slices as well. Mince jalapeno; dice bell pepper and onion.

Spray skillet with nonstick cooking spray. Heat skillet on high. Place pineapples and mangos in skillet, sauté for 45 seconds, and remove. Let cool.

In a mixing bowl, combine honey, lime juice, and cilantro and season with salt to taste. Add the pineapple and mango. Mix well. Let sit for one hour and serve

Great to serve with shrimp cocktail or as topping for your entrée!
